How To Use Wood Chunks

Method 1 - Charcoal Grill

Step 1: Select from Kiawe, Ironwood, or Guava wood chunks, each with its unique flavor profile. For optimal smoke and flavor, only 1-3 wood chunks are needed. Although soaking the wood chunks is optional, we find that most of our customers choose not to soak, as these Hawaiian woods produce a rich smoke when used dry.

Step 2: Use your choice of lump charcoal or briquettes for your heat.

Step 3: Set up your charcoal grill for indirect cooking. Place the lit charcoal on one side of the grill, leaving the other side empty.

Step 4: Once the charcoal is ashed over and at the desired temperature, place 1-3 of your selected wood chunks directly on top of the coals.

Step 5: Wait 5-7 minutes after putting in your wood chunks before you start cooking or smoking

Step 6: Add additional chunks as needed

Method 2 - Gas Grill

Step 1: Choose from Kiawe, Ironwood, or Guava wood chunks.

Step 2: Place 1-2 wood chunks on the grate above the burner on your gas grill

Step 3: Preheat your gas grill on high with all burners on.

Step 4: Once the chunks begin to emit smoke and the heat is at your desired temperature you are now ready to start cooking or smoking

Method 3 - Smoker Box Grill

Step 1: Select your wood chunks from Kiawe, Ironwood, or Guava.

Step 2: Use your choice of lump charcoal or briquettes for your heat.

Step 3: Once the charcoal is ashed over and at the desired temperature, place 1-3 of your selected wood chunks directly on top of the coals.

Step 4: Wait 5-7 minutes after putting in your wood chunks before you start cooking or smoking

Step 5: Add additional chunks as needed
